1-1 1/2 lbs stewing beef
bouillon cube (1 if using Knorr, 2 if using Oxo)
1-2 onions, chopped
Flour
cooked red beets, chopped or grated.
mashed potatoes.
Cover stewing beef* with water, add bouillon cube and cook until tender. Drain, reserving bouillon.
In large frying pan melt a little butter and cook onion until clear. Add stewing beef and fry until browned. Sprinkle with flour and stir (1-2 tbsp). Add bouillon 1/4 cup at a time until gravy is nice consistency (better to be a bit on the thick side.
*For easier eating it is best to cut stewing beef small. This can be done before or after cooking.
Put stewing beef mix in 9x13 casserole. Cover with red beets. If desired sprinkle with a little pepper. Cover with mashed potatoes.
Bake for about 30 min. in 350 oven until heated through.
For nicely browned crust brush with butter and sprinkle with (toasted) breadcrumbs before baking.
Can be prepared ahead and refridgerated or frozen. Heat (after thawing) for 45-60 min.
