Red Cabbage Casserole


1 lb. ground beef
1 large onion, chopped
Red cabbage, cooked with bayleaf
Mashed potatoes

Cook ground beef over medium high heat. When it is about 3/4 done, drain off fat, return to heat, add onion and finish browning. Add salt and pepper to taste.
Place in 9x13 casserole. Cover with a layer of red cabbage.
Cover with a layer of mashed potatoes.
Bake in oven at 350 for about 30 min., till heated through.

To make a nice crust on it, before baking brush with butter and sprinkle (toasted) breadcrumbs on it.

Can be made ahead and frozen. Thaw before baking and bake for 45-60 min.
