Here is a really easy and delicious jam recipe that I found years ago in a Prairie farm paper.Anyone else remember Emma Oddie?

Rhubarb Ginger Jam

16 cups chopped rhubarb cut 1" pieces. ( choose slender red stalks if possible)
1/2 lb. crystallized ginger sliced thinly.
8C sugar

Mix together and let sit overnight. In the morning simmer till thick. Seal in sterile jars.
