Rhubarb Grunt

Saw this in my Nigella Lawson cook book 'how to be a domestic goddess'. haven't tried it yet but looks yummy and more important, simple...(sorry British book so ingredients by weight)


Filling: 650g rhubarb, cut into 2-3 cm pieces
200-250g caster sugar (dependent on taste/sweetness of fruit)
50g unsalted butter cut into small pieces, and more for greasing bowl

topping:
150g plain flour
3 tablespoons golden or ordinary caster sugar
1/2 teaspoon salt
250ml double cream, whipped

Preheat oven to 190 degrees C/375 degrees F
grease a shallow ovenproof dish (20cm x 30cm)

Spread chopped rhubarb over bottom of greased dish, sprinkle with sugar coating evenly and dot with butter.

For topping sift flour, sugar and salt into mixing bowl, gently stir in cream, making a sticky dough.
Spread this mixture over fruit in handfuls, covering top evenly.

Bake for 45 mins or until fruit is bubbling.

Serve with cream, ice-cream or custard.
