Rhubarb Muffins

1 egg
1 1/2 cups brown sugar
2/3 cup vegetable oil
1 tspn Vanilla
2 cups finely chopped Rhurbarb
2 1/2 cups all purpose flour
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 cup sour milk

sugar topping
1/3 cup white sugar
1 1/2 tsp Cinnamon

In a large bowl beat egg, sugar, oil & vanilla until light & fluffy. add Rhubarb. stir in dry ingredients, stir in milk. fill well greased muffin pans 3/4 full with mix.

mix together sugar & cinnamon & sprinkle over muffins.

Bake at 350 for 25 to 30 mins

makes approx 18
