1 1/2 cups sugar
1 1/2 cups water
1 tspn vanilla
2 cups diced rhubarb
2 cups sliced fresh strawberries
1 cup all purpose flour
2 tblspns sugar
1 1/2 tspn baking powder
1/4 tspn salt
1/4 cup butter
1/2 cup milk
3 tblspn brown sugar
Make a syrup by boiling together water & sugar, add vanilla. add rhubarb & strawberries & put into a well greased pudding dish.
Make topping by mixing flour, sugar, baking powder & salt, rub in butter until mixture resembles fine bread crumbs. add milk until just blended - do not over mix. drop spoonfuls of the mix onto the fruit mixture, sprinkle with brown sugar.
Bake at 425 for 30 to 35 mins - serve hot
