(Vegan)
Blend thoroughly:
1 2/3 cup white flour
1/2 cup firmly packed brown sugar
1/2 tsp. salt
2 1/2 tsp. baking powder (avoid animal product ingredients)
Mix together then add to dry. Stir gently until just moist:
2 large bananas mashed (approx. 1 cup)
1/3 cup apple juice (or orange)
1/8 cup vegetable oil
1 tsp. vanilla
VARIATIONS can be added to above mix.
- 1 cup dried pineapple + 1/2 cup chopped pecans
- 1 cup frz. blueberries (partially thawed)
- 1 cup dry cranberries + zest on one orange (use orange juice in basic recipe)
- zest of one lemon + 1/2 cup of poppy seeds
- 1 cup of chopped walnuts
- any small fruit chunks or chopped nuts can be added
- vary flavorings
Grease muffin tins (9 regular / 18 mini)
Bake 400 F.
18-22 minutes (regular) 15-17 (mini)
Let stand 5 minutes Remove from pan. Serve
NOTE: These have the oil reduced for low fat . The oil can be increased to 1/4 cup for a softer exterior on the muffin. For NO FAT the oil can be eliminated completely but the outside tends to toughen quickly.
