Salmon fillets with sesame seeds and teriyaki sauce:
serves 6
6 6 oz salmon fillets
4 tsp. sesame seeds
Marinade:
6 tbsp. sherry
6 tbsp. brown sugar
4 tbsp. water
4 tbsp. soya sauce
3 tbsp. vegetable oil
3 tsp. grated fresh ginger root
4 tsp. grated fresh garlic
Preheat oven to 425
1. Combine marinade ingredients in dish large enough to hold salmon and marinate approx. 20 minutes, turning once.
2. Remove salmon to baking dish; pour marinade into saucepan and boil 5 minutes or so until thick and syrupy; pour over fish, sprinkle with sesame seeds.
3. Bake fish 10 to 15 minutes (10 minutes per inch thickness).
Marinade is equally good with chicken or beef.
