Salsa Fosta


3-4 ripe tomatoes, chopped as finely as you can.
1 medium sized onion finely chopped
1/2 cup cilantro, also finely chopped
2 garlic cloves smashed and chopped, this is a very violent recipe
3 tbsp parsley and basil chopped if you've got them
1/2 cup olive oil
salt and pepper to your taste, maybe a splash of lime juice if you feel like it.
1 tsp of Sambal Oelek (get this at Thrifty's or Chinatown if you're in Victoria) It's my best secret for avoiding 2 serrano peppers or a couple of jalapenos, and is so much easier to have on hand for substituting for any kind of pepper. Want hotter? Add more. Start slowly or Uncle Vinnie's wine won't even work to soothe your buds.

This makes a generous amount for about four people. It looks too generous for four people and everyone will protest you've made too much. Hah. It'll go so fast that everyone will blame their neighbour for sneaking more than their share. Serve with fresh taco chips--a touch of wow is to heat tacos in the oven for about five minutes. When they ask if you made them, too, just smile and tell them your Spanish grandmother gave you the recipe--Mama Salsa Fosta.
