Sausage Patties

makes 24 to serve 12

3 lbs ground chicken, turkey, pork or combination of, preferably organic
1 1/2 tsp each dried savory, thyme, marjoram
1/4 cup each fresh parsley & sage
2 tsp salt
3/4 tsp black pepper
2 cloves minced garlic
1/4 tsp each nutmeg & allspice
2 cups approximately, fresh whole wheat bread crumbs made in food processor

Combine everything but bread crumbs.
Using a 1/4c measure, scoop out portions and with a fork remove from measure into breadcrumbs. Coat and turn over with fork. Then pick up with your hands and shape into patties that look like big falafels rather than flat hamburgers.

Fry in unsalted butter or vegetable oil.
Freeze on wire rack on cookie sheet. When frozen package into portions, two per person, four per sandwich bag.
Defrost in fridge the day before, as needed.
Reheat in toaster oven or frying pan.
