I got this recipe from a friend of mine who used to cook in the logging camps. I like it because there is no cutting in of fat/butter, which makes this a breeze to make up.
4 c. all purpose flour
1/2 c. granulated sugar
8 tsp. baking powder
1 tsp. salt
2 beaten eggs
2 c. whipping cream (or 1 c. each of heavy cream and milk)
milk for brushing tops
sugar for sprinkling
Combine flour, sugar, baking powder & salt. Stir.
At this time add grated cheese (or ?) if you wish.
In another bowl beat eggs till frothy.
Add to flour along with the milk/cream. Stir until soft ball of dough is formed. Don't overwork!
Turn out on lightly floured board and knead 8 - 10 times.
Pat or roll out 1" thick. Cut with round cutter & arrange on ungreased baking sheet. (close together for soft sides and 1" apart for crisp sides) Brush tops with milk then sprinkle with sugar.
Bake at 425 F for 15 mins. until risen and browned. Makes 2 doz.
Other options...fold in:
sauteed bacon/ham, green onions, cheese (don't sugar tops)
