I just had this served to me in California and it was absolutely delicious... I didn't read the whole egg thread, so hope I'm not repeating someone:
Scramble eggs as usual.
Just before serving stir in and toss to heat:
a small handful of smoked (soft-smoked... looks like lox) salmon and about 2 tbsp. of cream cheese per person.
This is soooo good. Serve with fresh hot croissant if you want to be totally decadent.
