4 - 6 pears, peeled, cored, and shopped in 1/2" cubes
1/3 cup brown sugar
1 T. butter
lemon zest
4 large tsp. raspberry jam (homemade or just crushed berries)
4 T. Maple syrup (the real kind or.....MMM?)
French vanilla yogurt or whipped cream
lemon zest(again)
Garnish for top
Sprinkle sugar, butter and some lemon zest over pears. M/W for about 3 minutes (depends on ripeness). Take parfait or stem glass and put jam in bottom. Spoon cooked pears in carefully and sauce also. Drizzle maple syrup over, add a dollop of yogurt or whipped cream and drop a few lemon zests on top. Top off with whatever you have - a berry, kiwi slice, even a pecan if no fruit in house.
This has been very quick and easy for me to prepare and gets great reviews from our guests. I think I will replace the maple syrup with MMM as I am hooked on the ginger taste.
