1 cup sifted flour 4 eggs
1 tsp sugar 2 cups whole milk
1 tsp salt ½ pound Canadian bacon or ham
Sift flour into bowl. Add sugar and salt. Beat/mix eggs and milk together and
then slowly add to dry mixture. Stir/beat until well blended and refrigerate
for 8 hours or overnight.
Cut bacon/ham into small cubes. Fry bacon/ham and place in the container in
fridge overnight or can cook in the morning.
Assemble in the morning.
Butter or lightly spray 4 individual baking dishes (6 inch oval with 1 ¾
inch sides) Spread the cooked ham/bacon equally into the baking dishes. Remember
to beat batter in the morning so it is totally mixed again as it does separate
overnight. Add 2/3 cup batter on top of each dish.
Bake at 400-degree oven for 30 minutes or until set and nicely browned.
Note: Top will look dry and it will puff up like a soufflé but once
you remove from oven it will fall slightly. Serve immediately. Can remove from
the baking dishes or serve in dishes. Serves 4.
Serve with lingonberries(Ikea or some delis have them) and brown sugar OR syrups/toppings
of your choice.
Recipe can easily be doubled to serve 8
