3 leaves of sweet cicely
2 tbsp muscat or sweet wine
1-2 tbsp sugar
1/2 pint whipping cream
few small leaves and flowers of sweet cicely, to decorate
Infuse the leaves in the wine in a small pan over heat for five minutes. Strain into a bowl and stir in the sugar. When cool, add the cream and whip until thick. Spoon into a pretty bowl and decorate with small springs and flowers of sweet cicely. Keep in a cool place.
Very nice on a fruit tart.
