Went on net searching for a different dish to make for Bobs retirement party, found this and everyone asked for the recipe, its A KEEPER.
Ingredients:
1 1/4 cup whipping cream ( I used half and half)
1 large leek cut into 1/4 inch slices, about 2 cups
1 tsp dried thyme
1/4 tsp salt and black pepper ( I only use Kosher salt now as it tastes so much better)
1/4 tsp ground nutmeg
2 medium sweet potatoes, cut into slices, about 2 cups
4 medium parsnips cut into 1/4 inch slices, about 2 cups
2 cups grated cheddar
Oven 375 F
Combine first 5 ingredients in sauce pan and boil,low heat.
Stir frequently, add veggies,cook 10 min.
Spray big glass pan,about 2 L casserole size, with pam and layer veggies then cheese,
Bake until golden brown and bubbly, let sit 10 min.
I don't like parsnips and this was wonderful.
I had some leftovers as doubled it and left over mashed potatoes, so next day mixed it all together, recovered it with cheese and rebaked it and it was even yummier!!!
