Recipes1 Tbsp. oil
1 medium onion chopped
2 or 3 garlic cloves crushed or chopped
chopped chile peppers to personal taste
1 14 oz.can crushed or diced tomatoes
1/4 C chopped cilantro or parsley
2 Tbsp. sugar
2 tsp. chile pepper
1/2 tsp cumin
1/4 tsp. cinnamon
1- 15 oz can black beans
In skillet cook onion in oil for a a couple of minutes, add garlic and peppers, cook until onion is translucent. Stir in tomatoes, parsley sugar and spices. Cook for a few minutes then add beans, simmer covered for 45 minutes.
This is great served over brown rice on a cold day!
