Toad in the Hole
I found this recipe in the More Food That Really Schmecks cook book by Edna Staebler. We've modified it a little and now it has become one of our favourites suppers served with a salad.
Batter:
1 Cup Flour
Salt and Pepper to taste
1 Egg
1 Cup of Milk
Filling:
6 Breakfast Sausages
1 Sliced Onion
3 TBS of Butter
6-8 Mushrooms Slice
1 Tomatoe, sliced
1. Mix batter until smooth and shiny and set aside
2. Place sausage in an 8 inch square pan and cook and cook in a 400 degree oven for 10 minutes
3. Saute onions in butter
4. Add mushrooms and saute
5. Add tomatoes and cook for a few minutes
6. Spread vegetables over sausage and sprinkle with salt and pepper, to taste
7. Pour batter over sausage mixture
8. Bake at 400 degrees for 30 minutes
Serves 2-4

This is the receipe that I use:
5 pork sausages ( I use veggie sausage)
2 tbsp oil
2 cups whole eggs
2 cups AP flour
2 cups milk
1 cup carrots - cut into "fingers"
1 cup swede - cut into "fingers" ( rutabaga here)
1 cup brussel sprouts, sliced
1 cup shallots, sliced
2 tbsp honey
2 tbsp butter
chopped sage & parsley
salt & pepper
Melt butter and honey in frying pan and cook carrots, swede, sprouts and shallots for 5 minutes. Place into large casserole dish.
Fry sausage in oil until brown, place into hot oven for 5 minutes. Then place over veggies.
Whisk eggs in bowl, then add flour while continuing to whisk. Once smooth, add the milk, parsley salt and pepper.
Pour mix over sausage and veggies and bake in over at 350 for 35 minutes.
