This is great on fruit in the morning or on cake anytime.
1/2 pound soft tofu
1/4 cup oil (something light and not strong tasting-- like Mazola or canola)
2 tablespoons honey
1/2 tablespoon lemon juice
1/2 teaspoon vanilla
1/4 teaspoon salt
Blend in a food processor or blender until smooth and creamy; chill and serve as you would use whipped cream.
It's thick and smooth like sour cream. 4 oz serving is 6 oz of fat or 86 calories; my recipe suggests 2 tablespoon serving is 78 calories, 2 g fat 4 g carbohydrates.
It is absolutely wonderful and much more easily disguised than the hard chunks of tofu which would be in miso soup.
Note that it is non-dairy, so keep it in your collection for those who are
lactose intolerant.

Preheat oven to 375 degrees.
1 unbaked 8 inch pie shell
Sauté till slightly browned:
1 tbsp oil or margerine
4 oz mushrooms, sliced
Blend in a food processor until creamy:
1 lb tofu
2 tbsp lemon juice
1 tbsp soy sauce
1 tbsp Dijon mustard
1/2 tsp garlic powder
Line the bottom of the pie shell with browned mushrooms
Fold into the tofu mixture;
2 oz Swiss cheese, grated
Pour and spread all into the pie shell and bake 50 to 55 minutes.
Per serving 230 calories, 12 g fat, 13 g carbs

Chop in a food processor
2 cloves of garlic
Add and chop:
1/2 cup fresh basil leaves, packed
1/4 cup parsley leaves, packed
Add and blend until smooth and creamy:
1/2 pound tofu
3 tablespoons pine nuts or walnuts
2 tablespoons Parmesan cheese
2 tablespoons olive oil
Pizza
1-10 inch ready made pizza crust
1 1/2 cups Pesto Dip (above) spread evenly over crust
Spread with:
1 cup your favourite tomato sauce
Sprinkle over the top:
1 cup mushrooms, sliced
1/2 cup olives, sliced
1 small sweet onion, cut in rings
1/2 cup mozzarella, grated (or not, depending on tastes)
Bake for about 10-15 minutes or until cheese is melted.
(If your favorite tomato sauce doesn't have herbs and spices, add them, too. Pizza is great for variations.)
