RecipesHave you tried my tofu salad on muesli breakfast pitas? You make a regular egg salad type mixture with crumbled organic tofu instead of eggs. It's also a break from too many days of eggs.
Crumbled organic tofu
1 small Grated Carrot
2 stalks Diced Celery
3 chopped Green Onions
1/2 teaspoon Celery seed
Turmeric - enough that it turns egg yolk yellow
Mayonaise
White pepper and a little salt
Top a breakfast pita with a scoop and add some grated cheddar and heat in the toaster oven at 325Funtil warm.
With this, I serve mesclun salad and roasted sweet potato wedges (toss with sesame oil and Chinese 5 spice powder or nutmeg before baking; no salt necessary).
