package 8" flour tortillas
1 15 oz. can black beans
3/4 C chopped onion
3/4 C choppd red and yellow pepper
3/4 lb. shredded cheddar
8 chicken tenderloins
taco seasoning to taste
2 16 oz jars salsa
sour cream
Cook black beans, onions, peppers, and taco seasoning(to taste) in an uncovered
saucepan til most of the liquid has evaporated. Meanwhile sprinkle chicken tenders
with taco seasoning and saute in a little oil til lightly browned and cooked
through. To assemble the cake place one tortilla on a greased pie plate and
spread with half the bean mixture. Sprinkle with cheese. Place another tortilla
on top and arrange chicken on it. Sprinkle with slasa. repeat the process. Place
one last tortilla on top and sprinkle with salsa and remaining cheese. Bake
20 min, at 350 deg. Serve with extra salsa and spor cream.
I used a spring form pan which worked very well. I didn't use as much slasa
as called for and because it was there and Carol suggested it I added a layer
of chopped fresh chard , which was an interesting and tasty addition.
This is quick easy and delicious. It would be equally as good without the chicken
for a vegetarian version or with crumbled hamburger or????
