Tortilla Quiche

9 inch pie plate, sprayed (see notes on changes below)

5-6 inch flour tortillas (line the pan, overlapping and extending about 1/2 inch beyond the rim. (I thought I would do individual ramekins)
1 cup chopped cooked ham
1 cup shredded cheese blend.
8 eggs beaten
1/2 cup cream style corn
1 tsp chili powder
1/2 cup chopped green or red pepper
2 tablespoons chopped fresh cilantro or parsley

Layer with ham and cheese over the top of the tortillas.

Combine eggs, corn and chili powder, slowly pour over ham mixture. Sprinkle with peppers. Bake at 350° for 25-30 minutes or until the center is set. Sprinkle with cilantro. Let stand 5-10 minutes before serving. 4-6 servings.

Serve with avocado slices & cherry tomatoes.

I have made some adjustments to it and I think it is better.

I make it in individual spring form pans and find that it takes longer to cook than specified in the recipe. Also I have quit putting peppers in it as it seems to make it more watery.

I now have added 1 tsp. prepared mustard to the recipe and cook it at 365° for 35-40 minutes. I find if it has no meat then it takes a bit less time to bake. I serve the individual ones with herbed baked tomatoes.

It is very good and people in their 20-40 range really like it. I am not sure I would serve it to people who are seniors. Maybe if they are adventurous. Some are not.
