1 banana
1 cup rice/soy milk
1 cup coconut milk
1 tsp vanilla
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1-1/2 tsp. cornstarch
1/4 tsp. salt, 1 loaf multigrain bread
Blend everything except the bread in a blender. Slice bread into thick slices. Heat the griddle, Brush with oil. Dip the bread into the mix and grill until golden brown on both sides.
Serve with your choice of fresh fruit, apple butter, soy yogurt, raspberry coulis, brandied pears/apples, etc.
***This recipe may stick. Heat the griddle well and make sure the oil is hot before adding the bread.

This easy vegan French toast recipe uses bananas instead of eggs, giving it a sweet flavor. I like to use a thickly sliced whole grain bread, but this recipe works well with just about any kind you choose. If you're feeling a bit more adventurous, try this coconut and banana vegan French toast recipe.
INGREDIENTS:
2-3 ripe bananas
3/4 cup soy milk
1 1/2 teaspoon cinnamon
1 teaspoon pumpkin pie spice (optional)
1 teaspoon vanilla
bread, any kind is fine
butter or margarine
PREPARATION:
Blend bananas, soy milk, cinnamon, pumpkin pie spice and vanilla in blender or food processor and pour mixture into pie plate or wide dish. Gently dip bread slices into the mix, coating both sides. Fry in butter or margarine in medium-hot skillet until golden brown. Serve with maple syrup if desired, and, as always, enjoy your wonderful vegan French toast!
