Sauce:
4 plums pitted and quarted, or equivalent frozen peach slices {I would never
forgo the plums as the taste 'carries' this dish.}
1 TBS grated fresh gingeroot
1 TBS fresh lemon juice
1/2 TBS tamari or soy sauce
pinch cayenne
Pancakes:{can be made ahead of time and rewarmed}
1 medium potato, peeled
1 zucchini
1 yellow squash
1 small spanish onion, peeled
1/2 tsp salt
1/2 tsp black pepper
1 clove garlic, finely minced
1/4 cup chopped chives
2TBS olive oil, divided
Sauce: Preheat oven to 400 degrees. Combine all ingredients in bowl, toss to mix. Let stand for 15 minutes to extract fruit juices.{Not to hard to do as you're probably trying to cook, answer the phone and serve coffee with a smile while putting the ingredients in the bowl!} Transfer fruit to baking sheet: bake until fruit is dark and juices are thick, about 15 minutes. remove from oven; cool. When cool, puree in blender until smooth. Refrigerate until needed.
Pancakes: Grate potato into mixing bowl. Grate zucchini, squash, and onion
into the one bowl. Add salt, pepper, garlic and chives and toss to combine.
Let stand for twenty minutes. {More time to check your emails, answer another
phone call and perhaps fix that plugged toilet!}
Heat 1 tablespoon oil in large non-stick saute pan over medium heat. Squeeze
potatoe mixture in clean dry teatowel to extract moiture. Divide mixture into
4 portions: sprinkle 2 portions evenly over bottom of pan, spreading with fork
to form 2 thin pancakes. Cook until golden, about 5 minutes.Flip over and cook
other side about 3 minutes, Repeat with remaining mixture, adding more oil if
necessary. Drain pancakes well on paper towels after cooking. Makes four servings.
My menu for this breakfast:
Strawberry Banana Tofu Smoothie or fresh oj
choice of two breads/muffins for vegans
A rice cereal or tofu yogurt, fruit dish, or whatever I have on hand
The above recipe with lots of fresh fruit/veggies to complete the serving. If I serve them fruits to begin with, then I use roasted/grilled veggies, etc. to complete the main dish plate.
