Allow one large tomato per person
Feta cheese
Cream cheese
Parmesan
Grated Cheddar
Sour cream to mix & soften
Fresh or dried Basil, fresh or dried tarragon
Salt & pepper to taste
Small amout of garlic
Fresh spinach
White onion
Feta cheese
Parmesan
Garlic
Basil & Oregano (Fresh or dried)
Saute onions until just transparent, sweat spinach & chop finely
Mix all ingredients together
(the above recipe makes an excellent stuffing for Chicken also)
Take top off tomato & scoop out the middle, stuff with chosen filling & bake at 350 for approx 15 mins or until tomato starts to soften (should still be firm to the touch)
Either recipe makes a good vegetarian entree - can also be used to stuff Mushrooms. Red peppers etc
