Veggie Bake


4 MED. POTATOES, SCRUBBED, CUT 1/2 (I cm) CUBES
1 SMALL ONION, CHOPPED
1 SMALL ZUCCHINI, CHOPPED
1 RED PEPPER, CHOPPED
1 YELLOW PEPPER, CHOPPED
1 TSP. (5 mls) THYME
SALT AND PEPPER TO TASTE
1 1/2 CUPS (375 mls.) CHOPPED LEAN HAM (I use back
bacon)
6 FRESH EGGS

Place potatoes and onion in a lightly greased 13 x 9" (3L) baking dish. Bake, uncovered at 400F (200C) for 10 mins. sitirring occasionally. Add zucchini, red and yellow peppers. Season with thyme, salt and pepper. Bake, uncovered, for 20 mins, stirring occasionaly. Stir in ham. Make 6 hollows in vegetable mixture and gently break an egg into each hollow. Bake about 10 mins longer until eggs are set and vegetable are tender. Makes six servings.
