1 loaf French bread, cubed
6 egg whites }
5 eggs } or use 8 whole eggs
2 ¼ cup milk
1 tsp sugar
1 tsp cinnamon
1 tsp vanilla
¼ tsp salt
2 cups frozen mixed berries (or however much it takes to cover the bread)
2/3 cup brown sugar
2 Tbsp butter
Spray 9x13 casserole with Pam
Place bread cubes in pan
Combine egg whites and eggs, milk, sugar, cinnamon, vanilla and salt – beat a little
Pour over bread cubes
Cover and refrigerate at least 8 hours or overnight
*30 minutes prior to baking, take dish out of fridge
* take berries out to thaw a bit as well
Bake dish, covered at 350 degrees for 30 minutes.
In small bowl cut butter into brown sugar until crumbly
Take out dish and sprinkle with berries and top with brown sugar mixture
Bake again, uncovered 20-30 minutes.
Cut into squares Serves 6-8.
If desired, serve with syrup
I use left over bread, mixture of white, whole grain, whole wheat and even added a cinnamon raisin bagel to it once. I don't think all whole grain would work, because it would likely not absorb enough liquids, but there's only 1 way to find that out.
I have used 1/2 the recipe to make in a pieplate and makes 6 nice pieces.
I serve it by itself sprinkled with icing sugar, but I suppose you could add stuff to it.
