found this recipe this morning as I was going through my "things to try sometime" collection of recipes. Considering that the fruit is all out of a can (gasp!), this would do in a pinch when you have unexpected guests arrive at the doorstep.

"Warmed Sherried Fruit Breakfast Casserole"

Ingredients:
2 - 15 oz. cans of sliced pears or chunk pineapple
1 - 16 oz. can peach halves or slices
1 - 16 oz. can apricot halves
1/2 cup butter or margarine
3/4 cup sherry
2 - Tablespoons flour
1/4 - cup brown sugar

Variations of fruit may be adjusted to seasonal availability or personal likes

Arrange fruit in 2 quart casserole dish.
Melt butter over low heat, add flour and sugar, stirring until all lumps are gone (good Luck)
Gradually add sherry; cook over med. heat until thickened.
Pour over fruit; cover and refrigerate overnight.
Bake at 350 degrees for 25 min. or 10 min on high in microwave.
Serves 10 to 12
