This is a very nice dessert to have ready for folks with anniversaries. It is
especially pretty in a sherbet glass, or a Margarita glass dressed up with citrus
curls or chocolate shavings or bought chocolate garnishes that come in various
designs. Always use the best chocolate you can find. (yes, I know white chocolate
isn't really chocolate, but my taste buds believe it is.)
White Chocolate Margarita Mousse
2 eggs
2 egg yolks
2/3 cup sugar
1 tbsp finely grated lime rind
1/2 cup lime juice
2 tbsp tequila
3 ounces white chocolate chopped
1/4 cup whipping cream
In heatproof bowl over saucepan of hot not boiling water, whisk together eggs, yolks, sugar lime rind and juice and tequila; cook, whisking often, until thickened and mixture falls in ribbons when whisk is lifted about 8 minutes Remove from heat.
Add white chocolate; stir until melted Pour into clean bowl; place plastic wrap
directly on surface. Refrigerate until chilled about one hour Can make ahead
up to three days!
In bowl, whip cream; fold half into lime mixture. Fold in remaining whipped
cream just until combined. Spoon into glasses or dessert dishes. Make ahead
cover and refrigerate for up to 2 days.
Makes six servings.... ha ha ha!
