This is a recipe that my Mom and Grandmom used to make for the family during the war when it was almost impossible to get eggs. No eggs in it! I make this for guests and serve it for afternoon tea...or I make it as I'm doing right now in place of the fruit course. I serve it with fresh peaches or pears or berries and some Astro French vanilla yogurt. And along with that I tell them where the recipe originated. It's tasty and the fact that our parents made it those long years ago seems to really 'touch' a lot of the guests.
1 cup raisins
2 cups water
1 tsp soda
1 tbsp lard
1 cup sugar
1 tsp cloves
1 tsp nutmeg
! tbsp cinnamon
pinch salt
11/2 cups flour
1/2 cup chopped walnuts [optional]
1/2 cup coconut
Combine raisins and water in a saucepan and bring to a boil, then simmer for
20 minutes. Add soda and lard to raisin mixture and let cool. Mix dry ingredients
together in bowl. Add raisin mixture to dry mixture and mix well. Pour into
greased 8 " square pan and bake at 359 for 20 to 25 minutes until firm
on top.
I've also made this recipe as muffins.
