Yogurt Custard with Seasonal Fruit & Burnt Sugar

Use whatever fruit you fancy. Poached pears or apples, fresh strawberries, whatever.

Yogurt Custard
4 cups seasonal fruit
4 large egg yolks
400 ml unsweetened yogurt
1-2 tbsp honey

Stir over gentle heat till boiled and thickened. Arrange fruit in plate and add warm custard. Decorate with shards of burnt sugar.

Burnt Sugar
Cover a flat oven tray with sheet of alum. foil. Spray with Pam and sprinkle a cup of fine granulated sugar. Grill till sugar is liquid and golden. Remove and cool. Crack into shards and store in airtight container (not in fridge).
