1 1/2 cup almond flour
1 1/2 cup flaxmeal
1 cup whey protein powder, plain or vanilla
2 tsp baking powder
2 tsp ground cinnamon
1 tsp ground nutmeg
1 meduim zucchini grated
1 egg
1 cup water
1/4 cup canola oil
1/4 cup sour cream
1/4 cup DaVinci Vanilla SF Syrup(or splenda to taste)
1/2 cup chopped pecans
Mix almond flour, flaxmeal, protein powder, baking powder, cinnamon and nutmeg.
In a separate bowl, mix water, oil and egg.
Add to dry mixture.
Stir in sour cream and syrup
Stir in grated zucchini
stir in chopped pecans
Spoon into muffin tins and bake at 350Ffor 15-20 minutes
Yields approx 18 muffins
